Pungent spice mixture called for in many Indian recipes. Store in an airtight container.

Ingredients

1 tbsp. cumin seeds
1 tbsp. black peppercorns
5 cloves
1/2 tbsp. dried mint leaves
2-1/2 tbsp. dried mango powder
1/4 tsp asafetida powder
1 tsp. chili powder
1 tsp. ginger powder
1 tbsp. rock salt
2 tsp. sea salt
1/4 tsp. tartaric acid

Directions

  1. Set aside the rock salt and sea salt and lightly roast the remaining ingredients together in a skillet over medium heat, until the become aromatic (about 5 minutes). Be sure to stir constantly or the ingredients will easily burn.
  2. Remove from heat and set aside to cool.
  3. Add the rock salt and sea salt and grind in a spice grinder or clean coffee grinder.
