Tamarind-Peanut Chutney

This chutney should be served immediately. To store, mix in small amount of lemon juice or vegetable oil and store in an airtight container.

Serves: Makes about 1 cup

Ingredients

1/2 cup grated coconut
4 red chilies (substitute 1 tsp. red chili powder)
1 long tamarind pod (substitute 1 tbsp. tamarind concentrate)
1/2 tsp. minced garlic, optional
1 tbsp. crushed peanuts
Salt to taste

Directions

  1. Grind all ingredients together in a blender to until smooth. Use small amount of water if required but keep at a minimum.
