Roti is a flat-bread typically made using a tandoor oven but this recipe offers an alternative. You will ll need a source for an open flame – a gas stove or barbecue grill both work well. Prep time does include time for dough to rise.

Ingredients
2 cups wheat flour
1/4 cup maida (cake or pastry flour)
2 tbsp ghee
2 tbsp curd (plain yogurt)
Salt to taste
Directions
- Mix the flour, maida and salt. Add in the ghee and curd and knead into a slightly stiff and smooth dough, adding water as needed. Cover and set aside for 2 hours.
- Divide the dough into 8 portions and roll each into a ball. Roll out each ball into a dough circle about 1/4 inch thick (max)
- Heat a large skillet over medium heat and place dough on a dry surface. Cook until lightly brown on one side. Just before flipping, sprinkle water on the top.
- Remove roti from skillet and hold over gas flame using tong until surface browns and bubbles slightly. Be careful not to burn.
