Roti is a flat-bread typically made using a tandoor oven but this recipe offers an alternative. You will ll need a source for an open flame – a gas stove or barbecue grill both work well. Prep time does include time for dough to rise.

Ingredients

2 cups wheat flour
1/4 cup maida (cake or pastry flour)
2 tbsp ghee
2 tbsp curd (plain yogurt)
Salt to taste

Directions

  1. Mix the flour, maida and salt. Add in the ghee and curd and knead into a slightly stiff and smooth dough, adding water as needed. Cover and set aside for 2 hours.
  2. Divide the dough into 8 portions and roll each into a ball. Roll out each ball into a dough circle about 1/4 inch thick (max)
  3. Heat a large skillet over medium heat and place dough on a dry surface. Cook until lightly brown on one side. Just before flipping, sprinkle water on the top.
  4. Remove roti from skillet and hold over gas flame using tong until surface browns and bubbles slightly. Be careful not to burn.
