Recipe for popular flat-bread uses gas-flame or barbecue grill in place of a tandoor. Prep time does not include time for dough to rise.

Ingredients
3 cups self-rising flour
1 tbsp oil
2 tbsp butter
1/2 cup curds fresh (or use plain yogurt)
Salt, to taste
1/2 tsp baking soda
Warm milk for kneading.
Directions
- Mix together ingredients (except water) and cover with a damp cloth and set aside for 5 hours.
- Knead the dough and then pull off a plum-sized section.
- Roll out dough into a dough circle about 1/8 inch thick.
- Place dough on a pre-heated dry, flat skillet. Cook until lightly brown on one side. Just before flipping, sprinkle water on the top.
- Remove roti from skillet and hold over gas flame using tong until surface browns and bubbles slightly. Be careful not to burn.
- Serve with butter or preserves.
