This spinach, onion and cheese curry goes well with your choice of flatbread and a side of rice.

Ingredients
18 oz. fresh spinach
5 medium onions
2 cloves garlic
6 tbsp. vegetable oil
7 oz. paneer (substitute ricotta cheese)
Salt, to taste
1 tsp. garam masala
1 tsp. ground cumin
1/2 tsp. chili powder
Directions
- Boil spinach on water until soft. Drain then puree spinach in food processor. Set aside.
- Dice 4 onions very fine then add to skillet and sauté in oil over medium heat until translucent.
- Slice the remaining onion, then combine with garlic in food processor and blend to a paste.
- Combine onion-garlic paste with sautéed onions, spinach puree, garam masala, ground cumin and chili powder.
- Return mixture to skillet and cook for a minute. Add small amount of water if needed to keep mixture moist.
- Cut the paneer into bite-sized cubes. In a separate skillet fry in oil over medium-high heat until golden brown.
- Add paneer to spinach mixture and serve warm.
