Ingredients

1 pound plums, halved and pitted
1 pound apples, peeled and cored
1 pound tomatoes, chopped
1 pound onions, sliced
2 large garlic cloves, chopped
3 cups raisins
1/4 teaspoons mace
1/4 teaspoons ground mixed spice (garam masala)
2 tablespoons ground ginger
2 cups water
1 pound light brown sugar

Directions

  1. Combine all the ingredients except the sugar in a heavy saucepan.
  2. Simmer (low boil) for 30 minutes until ingredients are tender, adding water as necessary.
  3. Add brown sugar and stir to dissolve. Continue simmering until mixture thickens, about 15 minutes.
