Grind your own spices for the freshest most aromatic result!

Ingredients
2 1/2 tsp. fenugreek
1 tsp. (about 20 pods) cardamom seeds
3 tbsp. coriander seeds
1 tbsp. cumin seeds
1 tbsp. mustard seeds
6 cloves, whole
1 3 in. stick cinnamon; broken into pieces
1/4 tsp. ground mace
1/4 tsp. ground nutmeg
2 pinch cayenne
2 tbsp. ground turmeric
Hot pepper, toasted and dried (to taste)
Directions
- Crack the cardamom pods to release the seeds.
- Toast the fenugreek, cardamom, coriander, cumin, mustard seeds, cloves, and broken cinnamon stick in a non-stick dry skillet for 10 minutes. Be careful not to burn the spices - stir often. Let cool.
- In a bowl, combine the toasted spices with the mace, nutmeg, cayenne, turmeric and peppers.
- Combine ingredients in a spice grinder. Use a coffee grinder (make sure to clean to remove coffee grounds) if you don't have a spice grinder.
