Ingredients

2 1/2 tsp. fenugreek
1 tsp. (about 20 pods) cardamom seeds
3 tbsp. coriander seeds
1 tbsp. cumin seeds
1 tbsp. mustard seeds
6 cloves, whole
1 3 in. stick cinnamon; broken into pieces
1/4 tsp. ground mace
1/4 tsp. ground nutmeg
2 pinch cayenne
2 tbsp. ground turmeric
Hot pepper, toasted and dried (to taste)

Directions

  1. Crack the cardamom pods to release the seeds.
  2. Toast the fenugreek, cardamom, coriander, cumin, mustard seeds, cloves, and broken cinnamon stick in a non-stick dry skillet for 10 minutes. Be careful not to burn the spices - stir often. Let cool.
  3. In a bowl, combine the toasted spices with the mace, nutmeg, cayenne, turmeric and peppers.
  4. Combine ingredients in a spice grinder. Use a coffee grinder (make sure to clean to remove coffee grounds) if you don't have a spice grinder.
