Ingredients

1 cup warm water
1/3 cup sugar
1/3 cup ghee
1 1/2 cup maida (plain flour)
ghee to deep fry

Directions

  1. Combine the warm water, sugar and ghee in a large bowl and mix until the sugar is dissolved.
  2. Add the flour and knead until dough is soft and elastic.
  3. Divide dough into four equal sized dough balls then roll each into rounds 1/3 inch thick.
  4. Cut into small diamond shapes, approximately one inch in length.
  5. Lift with a spatula and lay flat on a dry cloth towel for 45 minutes to dry.
  6. Heat the ghee in a medium skillet over medium or medium-low heat.
  7. Fry diamonds until golden brown. Remove to paper towel to drain excess oil.
  8. Cool and serve.
