Ingredients

3 medium potatoes, peeled and boiled
1 tsp. red chili powder
1 tsp. salt
1/2 tsp. coriander powder
1/4 tsp. turmeric powder
1/4 tsp. garam masala (spice mixture)
2 pinches asafetida powder
1 1/4 cup water
1 tbsp. oil
1 tsp. cumin seeds
1 tsp. mustard seeds
1/2 tsp. ginger, grated
1 tsp. garlic, minced
2 green chilies, slit
1 stalk curry leaves
1 cup curd (plain yogurt), beaten (about 2 minutes)
1/4 tsp. wheat flour
1 tbsp. coriander leaves chopped

Directions

  1. Cut potatoes into large sections. Mash 3 or 4 sections by hand, and leave the remaining sections intact. Set potatoes aside.
  2. Mix all the dry spices in 1/4 cup water and set aside.
  3. Heat oil in a medium skillet. Add the cumin and mustard seeds. When they begin to sizzle, add the ginger, garlic, chilies, curry leaves and spice-water mixture and cook for 2 minutes.
  4. Add beaten curd and cook for 5 minutes, stirring continuously.
  5. Add the remaining cup of water, potato and wheat flour and stir well.
  6. Bring to a boil then lower heat and simmer for 10 minutes until consistency is thick.
  7. Sprinkle with chopped coriander and serve hot.
