Ingredients

1/2-inch section of ginger, chopped
10 cloves garlic, peeled
1-1/2 cups water
4 tbsp. vegetable oil
3 tsp. cumin seeds
2 tsp. ground coriander
2 medium tomatoes, peeled and diced
1 1/2 lb. green beans, trimmed and sliced lengthwise
Salt and pepper, to taste
3 tbsp. lemon juice

Directions

  1. Combine ginger, garlic cloves and 1/2 cup water in a food processor with water. Blend until smooth.
  2. Heat oil in a large skillet over medium heat. Fry the cumin seeds briefly, until the aroma is released (less than a minute) then add the blended garlic/ginger mixture and continue frying for 2 minutes.
  3. Add the coriander and tomatoes, stir and cook for 2-3 minutes, mashing the tomatoes.
  4. Add green beans, , 1 cup water and salt. Reduce heat to low and cover for 10 minutes. Green beans should be tender, but not mushy.
  5. Add lemon juice and pepper. Raise heat and cook uncovered until water evaporates.
