This cardamom flavored snack is sometimes sweetened with sugar, and covered in edible silver foil. Decorate this version with crushed pistachios.

Ingredients

1/2 cup condensed milk
1 cup paneer (cottage cheese), mashed
2-3 drops kewra essence (a flower-based extract; you may substitute kewra water or rose water but use extra)
1/4 tsp. yellow food coloring
1 tsp. ground cardamom
Pistachios, for decoration

Directions

  1. Combine paneer and condensed milk and cook over medium heat, stirring constantly. Cook until the mixture no longer adheres to the side of the saucepan, about 8 minutes.
  2. Add kewra essence and yellow food coloring, then remove from flame.
  3. Turn out mixture onto a plate and set aside to cool.
  4. Shape mixture into small balls.
  5. Sprinkle with ground cardamom and serve.

I just made a recipe for spnacih and paneer from Deborah Madison's book this can't be tofu , which substitutes tofu for paneer. It was okay, but I thought it would be much better with the real thing. But where to get it? Aha! I can make paneer at home
