Ingredients

1 can (14.5 oz.) chick peas, undrained
1 large onion, chopped
2 medium potatoes
1 tsp. mustard seeds
3 pods cardamom
1 tsp. ground coriander
1 tsp. cumin seeds
1 tbsp. garam masala (spice mix)
2 tbsp. vegetable oil
Salt, to taste

Directions

  1. Peel and boil potatoes for 15 minutes, then set aside to cool.
  2. Heat the vegetable oil in a large skillet over medium high heat. Add the mustard seeds. Wait a few minutes for the mustard seed to heat up and crackle, then add the cardamom pods and stir.
  3. Add sliced onions and fry until onions begin to brown, about 5-8 minutes.
  4. Add the coriander and cumin seeds and stir.
  5. Lower the heat to medium and mix in the chickpeas and liquid with the onions.
  6. Cut up the potatoes into 1/2-inch cubes and add to skillet.
  7. Add garam masala and stir.
  8. Cook uncovered for 5 minutes, stirring often. Add salt to taste. If potatoes are not yet tender, continue cooking. Add water in small amounts as needed.

Enjoyed this. Easy to make and flavorful. Had it for lunch with enough left over for a second day. It was good reheated.
