Deep fried dough cut into mall diamond shapes. Great for snacking or dessert.

Ingredients
1 cup warm water
1/3 cup sugar
1/3 cup ghee
1 1/2 cup maida (plain flour)
ghee to deep fry
Directions
- Combine the warm water, sugar and ghee in a large bowl and mix until the sugar is dissolved.
- Add the flour and knead until dough is soft and elastic.
- Divide dough into four equal sized dough balls then roll each into rounds 1/3 inch thick.
- Cut into small diamond shapes, approximately one inch in length.
- Lift with a spatula and lay flat on a dry cloth towel for 45 minutes to dry.
- Heat the ghee in a medium skillet over medium or medium-low heat.
- Fry diamonds until golden brown. Remove to paper towel to drain excess oil.
- Cool and serve.
