Eggplant with Rice (Vaangi Baath)

This wonderful curry of sautéed eggplant and onions mixed with rice is a meal in itself.

Ingredients
1 cup rice
2-1/2 cups water
2 medium onions
1 eggplant, about 10-12 ounces
2 tbsp. vegetable oil
Coriander powder, to taste
Chilli powder, to taste
Salt, to taste
Cilantro leaves, chopped fine, for garnish
Directions
- Prepare the rice by cooking in 2-1/2 cups water until ready. Rice should not be overcooked and too soft. Set aside to cool.
- Dice the eggplant and onion into large pieces (to avoid eggplant getting mushy).
- Saute the onion in vegetable oil until transparent, about 5 minutes. Add in eggplant and continue sautéing for a few minutes.
- Add the spices and continue to sauté for 5 minutes.
- Combine the mixture with the rice and mix well.
- Serve garnished with a sprinkling of cilantro leaves.
