Flat-bread from West India is easy to make and healthy. Although it contains a small amount of oil, it is cooked in a dry skillet.

West Indian Vegetarian-Dairy Bread

2 cups whole wheat flour
1 teaspoon salt
2 tablespoons vegetable oil
1/4 cup milk
1/2 cup water


  1. Combine the flour, salt, oil, milk, and half the water
  2. in a bowl.
  3. Mix by hand,adding remaining water in small amounts until dough firms into a ball.
  4. Oil hands lightly and continue kneading for 10 minutes.
  5. Set aside, covered, for 15 minutes.
  6. Divide the dough into 6 pieces. Roll each piece into a circle 1/4 inch thick.
  7. Heat a large skillet over medium heat.
  8. Place a dough circle in the skillet and cook until lightly browned on the bottom. turn and repeat. Press down to flatten with a wooden spatula.
  9. Repeat with remaining dough circles and serve warm.
