Ingredients

1 bunch mustard greens, chopped and patted dry
1 bunch spinach, chopped and patted dry
1 tbsp. oil
1/2 tsp. ginger, grated
1/2 tsp. garlic, minced
3 green chilies
Salt, to taste
1 cup water
2 tbsp. ghee
1 onion, chopped fine
Juice of half a lemon
1/2 tsp. garam masala (spice mix)
1 tbsp. maize flour
1 tbsp. grated cheese or paneer, optional (substitute ricotta cheese)

Directions

  1. Heat oil in pressure cooker, and then add mustard greens, spinach green chilies, ginger and garlic and mix.
  2. Add salt, to taste and 1 cup of water.
  3. Cook for about 6-8 minutes (2 whistles in a ‘whistling pressure cooker). Transfer to a food processor and grind until you have a paste.
  4. Heat ghee in a skillet and sauté the onions until they brown.
  5. Add lemon juice, garam masala and flour and cook, stirring often, until oil begins to separate (about 10 to 15 minutes).
  6. Serve with a sprinkling of grated cheese.
