2 lbs beetroot
6 cups milk
2 cups sugar
1 tsp. ground cardamom (elaichi)
2-3 strands saffron
3 tbsp ghee


  1. Peel and grate the beetroot.
  2. Put 2 tablespoons ghee and the beetroot into a heavy skillet and heat over medium flame until the ghee is absorbed (about 5 minutes). Add milk and heat to boil, then immediately turn down heat to low. Heat until most of the milk is absorbed and the mixture thicken, stirring occasionally (about 30 minutes).
  3. Add the sugar, remaining ghee, cardamom and saffron ad continue cooking for a few minutes. Mixture should be thick and moist (do not overcook or it will harden).
  4. Serve warm garnished with a chopped almond or pistachio.

oh wow!!! u r in india??? thats so cool ramya. wish i too could say the same:( it must be raining there isn't it? do post abt whats haenpnipg there. kobbari mitai is my family's fav sweet. i am not very fond of coconut sweet though. my hubby is sitting rt
