These lentil crepes are easy to make but require long prep time to allow for the ingredients to soak or ferment. The prep time listed does not include these wait times.

Ingredients
1 cup rice
1/3 cup yellow moong dal (split mung beans or substitute split peas)
1/3 cup channa dal (substitute yellow split peas or chick peas)
1/3 cup urad dal (substitute the smaller black lentil)
2 tbsp. plain yogurt (curds)
1/2 tsp. bicarbonate of soda
2 tbsp. vegetable oil plus more for shallow frying
Salt, to taste
Directions
- Soak the rice and beans separately for 6 hours to soften.
- Grind each separately with a small amount of water to form a paste.
- Combine both pastes and mix in yogurt
- Mix in the yogurt, bicarbonate of soda, 2 tablespoons of oil and salt.
- Mix the batter well and set aside for 3 hours.
- Heat vegetable oil in a large skillet over medium high heat.
- Drop a tablespoon of batter into the skillet then spread quickly with the back of a spoon. Use circular motions to flatten and spread the batter into a thin round.
- Remove when crisp and repeat with remaining dough.
- Serve with your favorite chutney.
