This prep time for this sweet dessert does not include time to soak the mung beans (dal). Cook time is estimated.

Ingredients
18 oz. Moong dal (split mung beans or substitute green split peas)
2 cups sugar
2 cups ghee
2-3 strands saffron soaked in a tbsp. of milk
3 tbsp. milk
pinch ground cardamom (elaichi)
1 cup water
Directions
- Soak the dal for 5-6 hours, then rinse and remove the skins.
- Grind the dal finely using a small amount of water.
- In a small pot, add 1 cup water and sugar and bring to a boil. Once sugar has fully dissolved add 3 tbsp. of milk and continue boiling. Skim the fat that rises to the surface.
- Continue boiling until the syrup begins to thicken to 1-thread consistency. You can check for this consistency by taking a small amount of syrup between thumb and forefinger and slowly pulling fingers apart. If one single thread forms without breaking, then the syrup is ready. Remove from heat and set aside.
- Heat the ghee in a heavy skillet and add dal, stirring continuously to avoid burning. Continue heating the dal until it no longer sticks to the side of the skillet and is golden brown.
- Mix in the syrup, cardamom and dissolved saffron. Continue heating (and stirring) until liquid is absorbed.
- Serve hot, garnished with dry fruit.
