Flavorful side dish made of tomatoes and sauteed eggplant. Replace ghee with vegetable oil to make non-dairy.

Ingredients
1/2 pound eggplant
2 tbsp. ghee
1 small onion, chopped
1 garlic clove, sliced
1/2 tsp. turmeric
1 bay leaf
1 inch cinnamon stick
1/2 tsp. salt
3/4 tsp. cayenne pepper
1/2 inch slice fresh ginger
2 medium tomatoes, cut into chunks
1 tbsp. garam masala
Directions
- Slice the eggplant into half in slices and cut each circle in half.
- Heat ghee in a skillet and saute the onion and garlic for 2 to 3 minutes.
- Add the turmeric, bay leaf and cinnamon and continue sauteing for 2 minutes, stirring constantly.
- Mix in the sliced eggplant, salt, cayenne and ginger and continue cooking for 10 minutes.
- Add tomatoes and cook, covered, for another 10 minutes.
- Mix in garam masala and serve.
