This spinach, onion and cheese curry goes well with your choice of flatbread and a side of rice.

18 oz. fresh spinach
5 medium onions
2 cloves garlic
6 tbsp. vegetable oil
7 oz. paneer (substitute ricotta cheese)
Salt, to taste
1 tsp. garam masala
1 tsp. ground cumin
1/2 tsp. chili powder


  1. Boil spinach on water until soft. Drain then puree spinach in food processor. Set aside.
  2. Dice 4 onions very fine then add to skillet and sauté in oil over medium heat until translucent.
  3. Slice the remaining onion, then combine with garlic in food processor and blend to a paste.
  4. Combine onion-garlic paste with sautéed onions, spinach puree, garam masala, ground cumin and chili powder.
  5. Return mixture to skillet and cook for a minute. Add small amount of water if needed to keep mixture moist.
  6. Cut the paneer into bite-sized cubes. In a separate skillet fry in oil over medium-high heat until golden brown.
  7. Add paneer to spinach mixture and serve warm.
