These deep-fried vegetarian croquettes are made from a flavored paste made of moong beans (mung beans).

Ingredients
4 oz dried moong beans (mung beans)
1 tbsp. all-purpose flour
2 tsp. red curry paste
1 tbsp. light soy sauce
1 tsp. sugar
2 kaffir lime leaves (the leaves of a fruit that resembles a wrinkled lime)
Vegetable oil, for deep-frying
For the dressing:
4 tbsp. sugar
6 tbsp. rice vinegar
1/2 tsp. salt
Directions
- Soak the moong beans in water for 30 minutes. Drain and set aside.
- Roll the leaves lengthwise tightly. Slice thinly.
- Using a mortar, work the moong beans into a paste (or use a grinder).
- Add the flour, curry paste, soy sauce, sugar and sliced leaves, mixing each ingredient in one at a time.
- With wet hands take a walnut sized portion of the mixture and roll into a ball.
- Fry in heated vegetable oil until golden brown.
- Prepare the dressing: Heat the sugar, vinegar and salt over low heat until the sugar dissolves. Set aside to cool.
- Serve the fried moong bean balls with the dressing.
