This yogurt and lentil dish makes a great snack. The fried lentil vadas are soaked in water to soften them, and then they are covered in a yogurt mixture. There are many varieties - adjust the spices to your preference.

Ingredients
1/2 cup urad dal (black lentil)
1/2 cup moong dal (split mung beans)
1/2 cup water, or as needed
1 cup plain yogurt (dahi)
1/4 tsp. cumin
1/4 tsp. paprika
Vegetable oil for frying vadas
Directions
- Wash and soak the dals in water for 4 hours.
- Add to food processor and blend at medium speed. Add small amounts of water as needed to maintain a paste-like consistency. Add salt and mix.
- Heat oil over medium high heat in a deep frying pan.
- Drop tablespoons of batter in the hot oil and fry until golden brown. Remove the vadas, drain excess oil on paper towels, then soak in cool water.
- Whisk together the yogurt, milk and spices and set aside.
- Squeeze out the water from each vada then arrange in a dish.
- Pour yogurt mixture over vadas and serve!
