This is a great recipe because it mostly uses ingredients you likely already have. It works well as a vegetarian main dish or as a side dish.

Ingredients
1 onion, chopped
1 tomato, diced
1 clove garlic, minced
1 inch piece ginger, grated
Pinch turmeric
Salt and pepper, to taste
Garam Masala, to taste
1 medium cauliflower
2 medium potatoes
Directions
- Heat onions, garlic, ginger, tomatoes and spices in a medium skillet over medium and fry until onions soften (about 5 minutes).
- Break the cauliflower in flowerettes and cut the potatoes into
- cubes (8 pieces each).
- Add potatoes and flowerettes to masala and lower heat to simmer.
- Cover the pot until the cauliflower and potatoes are cooked through.
