Puran Poli (Sweet Flatbread)

This sweet dessert can be made non-dairy by using vegetable oil in place of the ghee (clarified butter).

Ingredients

1-1/2 cups channa dal (yellow lentils)
10 oz. jaggery (or 1 1/4 cup molasses)
1 tsp. ground cardamom
1 cup plain flour
1 tbsp. ghee
Warm water to knead dough
Ghee to serve

Directions

  1. Place dal in a pot and add enough water to cover. Boil until soft but still intact, about 5 minutes.
  2. Drain in a colander for 10-15 minutes, then mash.
  3. Break up the jaggery into small pieces (unless using molasses or powdered jaggery) and mix into dal.
  4. Place the mixture in a heavy saucepan and simmer, stirring constantly to avoid burning. Continue simmering until the mixture thickens (about 10 minutes). Set aside.
  5. Prepare dough by mixing 1 tablespoon ghee, flour, and a small amount of warm water. Knead to make a soft pliable dough.
  6. Take a small amount of dough and roll into a 4-inch circle.
  7. Take an equal amount of filling, place in center of dough circle, then close into a ball. Gently flatten the ball into a circle about 6 inches in diameter (or more), being careful not to break the dough shell.
  8. Heat a non-stick skillet over medium heat and cook the puran poli on both sides until lightly brown.
  9. Serve warm or cold with a light sprinkle of ghee.
