Carrot Halwa (Carrot Pudding)

This carrot dessert is straight-forward to make.

Ingredients
4 cups milk
4 cups shredded carrots
4 tbsp ghee (or use unsalted butter)
1/2 cup sugar
2 pinches cardamom
20 split cashews, almonds or pistachios, for garnish
Directions
- Boil milk in a saucepan, stirring occasionally.
- In a medium skillet, heat ghee over medium heat.
- Add shredded carrots, mix well, and cook for 5-8 minutes, until soft
- While carrots are cooking, roast nuts in a dry pan.
- Add milk to the carrots, mix well, and continue cooking for 8-10 minutes or until mixture thickens.
- Add sugar, mix and cook for an additional 5 minutes, stirring constantly. Add cardamom.
- Serve warm garnished with cashews.
