Doodhi Halwa (Bottle Gourd Dessert)

Bottle gourds, also known as calabash, are not widely known in the US but are popular in India and elsewhere. This sweet dessert recipe has many variations – adjust the sugar to your taste and optionally add green food coloring for a traditional appeal.

Ingredients

1 large bottle gourd, about 2 lbs. (doohdi)
6 cups milk
2 cups sugar
Pinch of ground cardamom (elaichi)
2-3 strands of saffron
1 tbsp ghee
2-3 drops green food coloring (optional)
3 tbsp. almonds or pistachios, coarsely chopped

Directions

  1. Peel and grate the bottle gourd
  2. Combine milk and grated bottle gourd in a large saucepan and heat to boil, stirring frequently. As it thickens lower to simmer, about 30 minutes.
  3. Add sugar and continue simmering to allow mixture to further thicken, about 8 minutes.
  4. Add ghee, pinch of cardamom, saffron and food coloring (if using) and reduce heat to low. Stir on low heat for 5 to 10 minutes, until any remaining liquid has evaporated.
  5. Serve warm garnished with chopped nuts.
