Bottle gourds, also known as calabash, are not widely known in the US but are popular in India and elsewhere. This sweet dessert recipe has many variations – adjust the sugar to your taste and optionally add green food coloring for a traditional appeal.

Ingredients
1 large bottle gourd, about 2 lbs. (doohdi)
6 cups milk
2 cups sugar
Pinch of ground cardamom (elaichi)
2-3 strands of saffron
1 tbsp ghee
2-3 drops green food coloring (optional)
3 tbsp. almonds or pistachios, coarsely chopped
Directions
- Peel and grate the bottle gourd
- Combine milk and grated bottle gourd in a large saucepan and heat to boil, stirring frequently. As it thickens lower to simmer, about 30 minutes.
- Add sugar and continue simmering to allow mixture to further thicken, about 8 minutes.
- Add ghee, pinch of cardamom, saffron and food coloring (if using) and reduce heat to low. Stir on low heat for 5 to 10 minutes, until any remaining liquid has evaporated.
- Serve warm garnished with chopped nuts.
