Gobi Aloo (Fried Cauliflower and Potato)

Ingredients

1 large cauliflower
3 medium sized potatoes, peeled
1/2 large onion, sliced thin
1 tsp. mustard seeds
2 pods cardamom
1 tsp. coriander
1 tsp. cumin seeds
1/2 tsp. turmeric
1 bay leaf
3 cloves
3 tbsp. vegetable oil
1/2 cup water

Directions

  1. Boil the potatoes for 15 minutes in a medium pot. Remove from heat and set aside.
  2. Cut the cauliflower into bite-sized florets.
  3. Heat the vegetable oil in a large skillet over medium high heat. Add the mustard seeds. Wait a few minutes for the mustard seed to heat up and crackle, then add the bay leaves, cardamom pods, cloves and stir.
  4. Add sliced onions and fry until onions begin to brown, about 5-8 minutes.
  5. Add the coriander and cumin seeds and stir.
  6. Next, add the cauliflower florets and fry to 2-3 minutes.
  7. Meanwhile, cut the potatoes into 1-inch cubes and add to the skillet.
  8. Lower the heat to medium, add the turmeric and continue frying for 2-3 minutes more.
  9. Reduce heat again to low, add 1/2 cup water, cover and cook for 5 minutes.
  10. Vegetables should be tender. If not, continue cooking, adding water as needed.
  11. Enjoy!
