Vegetarian green beans with tomato and spices makes a great side dish or light lunch!

Ingredients
1/2-inch section of ginger, chopped
10 cloves garlic, peeled
1-1/2 cups water
4 tbsp. vegetable oil
3 tsp. cumin seeds
2 tsp. ground coriander
2 medium tomatoes, peeled and diced
1 1/2 lb. green beans, trimmed and sliced lengthwise
Salt and pepper, to taste
3 tbsp. lemon juice
Directions
- Combine ginger, garlic cloves and 1/2 cup water in a food processor with water. Blend until smooth.
- Heat oil in a large skillet over medium heat. Fry the cumin seeds briefly, until the aroma is released (less than a minute) then add the blended garlic/ginger mixture and continue frying for 2 minutes.
- Add the coriander and tomatoes, stir and cook for 2-3 minutes, mashing the tomatoes.
- Add green beans, , 1 cup water and salt. Reduce heat to low and cover for 10 minutes. Green beans should be tender, but not mushy.
- Add lemon juice and pepper. Raise heat and cook uncovered until water evaporates.
