Use the vegetables of your choice in This tasty curry recipe including potatoes, spinach, string beans. Adjust the seasonings to your preference. Depending on the vegetables, you may also need to adjust your cooking time. We've attributed this recipe to East India, though curries are popular throughout India.

Ingredients

2 tbsp. vegetable oil
1/2 tsp. mustard seeds
1/8 tsp. urad dal (black lentil)
1 large onion, chopped
1/2 tsp. ground coriander
1/4 tsp. chili powder
1/4 tsp. garlic powder
1 tsp. salt
1 cup vegetables, chopped
1/2 cup crushed tomatoes

Directions

  1. Heat oil in a medium skillet over medium heat. Add mustard seeds and urad dal. Heat until the mustard seeds stop popping (they will pop right out of the skillet so you may want to loosely cover).
  2. When mustard seeds have mostly stopped popping, add the onions and fry until just brown (about 5-8 minutes).
  3. Combine the garlic, coriander, chili powder and salt.
  4. Add in the chopped vegetables, the spice mixture, and crushed tomatoes.
  5. Stir for a minute or two then lower heat to medium low and cook, covered, for 15 minutes, or until vegetables are tender.
