Various recipes use different amounts of poha (flattened rice, available at Indian grocery stores). Add more, per your own preference.

Ingredients
1 cup poha
1 1/2 tbsp. oil
1/2 tsp. cumin seeds
1/2 tsp. mustard seeds
1 small potato, chopped
2 onions, diced
5-6 small green chilies
1 stalk curry leaves, chopped
1/4 cup crushed groundnuts (peanuts)
1/4 cup grated coconut
1/4 cup coriander leaves
1/4 tsp sugar
Salt to taste
1 tsp. lime juice
Directions
- Wash poha gently in water, then drain and set aside for 15 minutes.
- Heat oil in a heavy sauce pan over medium-high heat.
- Add cumin seeds, mustard seeds, and chopped potato. Fry for 2-3 minutes until seeds begin to pop.
- Add onion, chilies and curry leaves. Fry until onions soften, about 5-6 minutes more.
- Reduce heat to low and remove from heat. Break up the poha and add to sauce pan. Add remaining ingredients and mix.
- Add salt and lime juice, to taste.
- Return to heat (low) and cook until mixture is evenly heated, stirring occasionally.
- Serve hot, garnished with coconut and coriander leaves.
