Fried okra with tomatoes and onions makes a great side dish. Popular in Northern India.

Ingredients
1 lb. okra
3 tbsp. vegetable oil
2 small onions, chopped
1/4 tsp. turmeric
2 small tomatoes, diced
Salt, to taste
Pinch of ground red pepper (or to taste)
Directions
- Cut the tips off the okra, then slice.
- Add oil to medium skillet and heat over medium high heat.
- Fry okra until golden brown and crispy. Adding oil as needed. Remove okra from oil and set aside.
- Add onions and turmeric and fry onions until browned.
- Return the okra to to the skillet and add tomatoes, salt and red pepper. Mix well.
- Transfer to baking dish and cover. Bake for 15 minutes at low temperature (250F).
