Simple preparation is ready in less than 25 minutes.
|
Ingredients
1 can (14.5 oz.) chick peas, undrained
1 large onion, chopped
2 medium potatoes
1 tsp. mustard seeds
3 pods cardamom
1 tsp. ground coriander
1 tsp. cumin seeds
1 tbsp. garam masala (spice mix)
2 tbsp. vegetable oil
Salt, to taste
Directions
- Peel and boil potatoes for 15 minutes, then set aside to cool.
- Heat the vegetable oil in a large skillet over medium high heat. Add the mustard seeds. Wait a few minutes for the mustard seed to heat up and crackle, then add the cardamom pods and stir.
- Add sliced onions and fry until onions begin to brown, about 5-8 minutes.
- Add the coriander and cumin seeds and stir.
- Lower the heat to medium and mix in the chickpeas and liquid with the onions.
- Cut up the potatoes into 1/2-inch cubes and add to skillet.
- Add garam masala and stir.
- Cook uncovered for 5 minutes, stirring often. Add salt to taste. If potatoes are not yet tender, continue cooking. Add water in small amounts as needed.
