These fried dough crisps have some heat from the chili powder. In case you can’t find omam seeds, look for alternate names such as “ajwain”, "bishop’s weed” or “carom”.

Ingredients
2 cups gram flour (chickpea flour)
1/2 cup plain flour
2 tsp. red chili powder
1/2 tsp. omam seeds
1/2 tsp. cumin seeds
1 tbsp. cilantro (fresh coriander), finely chopped
1 tbsp. vegetable oil plus more for deep frying
Salt, to taste
Directions
- Combine the chickpea and plain wheat flour then make a well in the center.
- Add in the chili powder, the omam and cumin seeds, the cilantro, 1 tablespoon of oil and salt and mix well.
- Add a small amount of water and knead, adding a little bit at a time until dough is soft and pliable.
- Make about 2 dozen small dough balls, then roll out each dough ball into thin circles (about a 1/4 inch thick, about 4 inches across).
- Make tiny holes in both sides of each dough circle using the tines of a fork, then set aside for 25 minutes.
- In a large skillet, heat vegetable oil over medium heat.
- Shallow fry the khajas until golden brown then drain on paper towels to remove excess oil.
