This recipe calls for a syrup that is single thread consistency. This is a measure for syrup consistency that does not require a candy thermometer. Single thread consistency is achieved when you take a small amount of syrup between your thumb and forefinger and gently pull apart (remove with a wooden spoon and let cool for a couple of seconds to avoid burning yourself!). If one thread of syrup forms and does not break apart as you separate your fingers you have single thread consistency.

Ingredients
1 cup besan (chickpea flour)
1-1/2 cups sugar
2 cups ghee
1-3/4 cups water
Directions
- Prepare syrup by combining the sugar and water and heating over medium heat to single thread consistency (see introduction).
- Sift the chickpea flour then add to syrup one tablespoons at a time.
- Reduce heat to low and add 2 teaspoons of ghee to the mixture, stirring until well blended.
- Repeat until all the flour is added, or until ghee is no longer absorbed.
- Transfer the mixture to a greased shallow dish and spread evenly. Press down gently with a spatula to bring ghee to surface (but do not remove).
- Set aside to cool (about 10 minutes).
- Cut into squares or triangles and serve.

I love all breads Indian style roti, chaptai, naan! I used to make my own all the time but honestly now they are carried at my grocery store not expensive at all so it's just as easy to buy.
