Vegetarian patties make a great side, appetizer or snack and can even be enjoyed at breakfast!

Ingredients
1 cup channa dal (substitute yellow split peas or chick peas)
1/2 cup finely chopped onion
1/2 cup chopped coriander
1/2 cup chopped dill leaves
3-4 green chilies, chopped
1/2 tsp. whole cumin seeds
Oil, for frying
Directions
- Wash and soak dal for 3-4 hours.
- Set aside 2 tablespoons of dal and grind the remainder coarsely.
- Combine all the remaining ingredients including the whole dal previously set aside.
- Mix in 2-3 tablespoons of hot oil.
- When mixture is cool enough to handle, shape round patties. Moisten your hands to keep the mixture from sticking.
- In a skillet add enough oil to cover bottom and heat to medium high.
- Carefully add patties to the oil. They do not need to be submersed in oil. Fry until both sides are golden brown, flipping once.
- Remove to paper towels to drain excess oil.
- Serve hot with green chutney, tamarind chutney, or ketchup
