Pear and Mango Chutney

This recipe for chutney makes a large quantity. You can either adjust the quantities or store excess in an airtight container for up to one month.

Ingredients
9 oz. mango
9 oz. pears
2-1/2 cups Sugar
2 cups water
2 tsp. salt
1 tsp. red chili powder
1 tsp. garam masala (spice mix)
1 tbsp. honeydew (marsh melon) seeds
1 tbsp. raisins
2 cloves, ground
8 almonds, chopped
8 cashews, chopped
Directions
- Peel and mash the fruit.Add 1 tablespoon of sugar to a heavy saucepan.
- Heat over a low flame, stirring constantly until it turns brown.
- Add 2 cups of water to sugar mixture and increase heat to allow mixture to boil. Once the sugar has completely dissolved, add the remaining sugar.
- Add the mashed fruit, cashew, raisins, seeds, chili powder and salt to the boiling sugar and water mixture and continue boiling until chutney thickens (about 15-20 minutes). Stir occasionally.
- Add ground clove and garam masala and mix well.
