Beetroot Halwa

This sweet dessert has a bright bold color and makes a great meal finisher.

Ingredients
2 lbs beetroot
6 cups milk
2 cups sugar
1 tsp. ground cardamom (elaichi)
2-3 strands saffron
3 tbsp ghee
Directions
- Peel and grate the beetroot.
- Put 2 tablespoons ghee and the beetroot into a heavy skillet and heat over medium flame until the ghee is absorbed (about 5 minutes). Add milk and heat to boil, then immediately turn down heat to low. Heat until most of the milk is absorbed and the mixture thicken, stirring occasionally (about 30 minutes).
- Add the sugar, remaining ghee, cardamom and saffron ad continue cooking for a few minutes. Mixture should be thick and moist (do not overcook or it will harden).
- Serve warm garnished with a chopped almond or pistachio.
