Khajur Burfi (Date Cookies with Coconut)

This recipe calls for creating square shaped cookies but you can also create a roll and then slice after chilling.

Ingredients

14 oz. condensed milk
2 lb. dates, seeds removed
1 cup mixed nuts (almond, cashew, pistachio)
1/2 cup dry coconut flakes

Directions

  1. Soak the dates in hot water for 30 minutes. Remove from water and grind to make a coarse paste.
  2. Combine milk, dates and mixed nuts in a non-stick skillet. Heat over medium-low heat until the mixture thickens (about 20 minutes). Stir constantly to keep the milk from burning or sticking to the skillet. Remove and set aside to cool.
  3. Turn the mixture into greased cookie sheet or shallow baking dish. Sprinkle coconut and press lightly.
  4. Chill for 30 minutes then cut into squares.
