Fried okra with tomatoes and onions makes a great side dish. Popular in Northern India.

Ingredients

1 lb. okra
3 tbsp. vegetable oil
2 small onions, chopped
1/4 tsp. turmeric
2 small tomatoes, diced
Salt, to taste
Pinch of ground red pepper (or to taste)

Directions

  1. Cut the tips off the okra, then slice.
  2. Add oil to medium skillet and heat over medium high heat.
  3. Fry okra until golden brown and crispy. Adding oil as needed. Remove okra from oil and set aside.
  4. Add onions and turmeric and fry onions until browned.
  5. Return the okra to to the skillet and add tomatoes, salt and red pepper. Mix well.
  6. Transfer to baking dish and cover. Bake for 15 minutes at low temperature (250F).
