Kaju Barfi (Cashew Dessert)

Kaju Barfi has many variations but this one is made without dairy and is straightforward to make.

Ingredients

2 cups cashews
1-1/2 c sugar
3/4 cup water
Pinch saffron

Directions

  1. Grind cashews in small batches using dry grinder (or coffee grinder), to a coarse powder
  2. Prepare sugar and water syrup, by heating over medium high to a boil. Lower heat to medium and add saffron. Heat syrup to 1-thread consistency (place a small amount of syrup between thumb and forefinger and pull fingers apart. If a single thread forms between fingers without breaking then syrup is done). Syrup should take about 10 minutes. Alternately, heat syrup to 225 F using a candy thermometer.
  3. Roast cashew powder on low heat in a medium frying pan for 3-4 minutes, to warm. Be careful not to overcook or nuts will release their oil.
  4. Add syrup to cashew powder. Mix well and cook for 2-3 minutes until mixture thickens and does not stick to sides of pan.
  5. Pour into a plate greased with vegetable oil or non-stick cooking spray and spread evenly. Set aside to cool.
  6. Cut into squares or diamond shapes.
